My Super Lemonade Recipe
Why have just lemonade when you can get protein and vitamin c, too?
We are just starting to feel the heat and humidity in St. Louis. Late May is pretty merciful for our river valley to begin laying on the mugginess, but hopefully there are some nice Spring days left.
Today, after a minimal amount of farm chores, I was sweaty and hankering for a tart, cold glass of lemonade. Instead of a sugary treat, a moment of responsibility came over me and I mixed up something healthy, refreshing, and quite yummy still. It may become a seasonal regular.
Ingredients
- One whole fresh lemon
- Two tablespoons of pastured collagen hydrolysate (11 g of quality protein)
- 1/4 teaspoon vitamin c crystals (1000 mg vitamin c)
(also adds a nice extra tartness) - One tiny spoon of stevia (45 mg)
- Water and ice
Steps
- Mix the collagen with an ounce or two of hot water first and stir to help ensure it completely dissolves. Add vitamin c, and stevia, stirring after each.
- Squeeze and strain the juice from your lemon, add and stir.
- Top with water to taste, and ice.
This could be enjoyed sparkling, as well. Instead adding pouring sparkling water to your mixture from 1 & 2, pour your mixture into the sparkling water in a separate glass.
