Culturing is a magical process. With just the right salinity and temperature, and lack of oxygen, lactobacillus acidophilus sets up shop. It completely takes over food, breaking sugars down into lactic acid and carbon dioxide, and making sure other, not as friendly, bacteria has no quarter.

L. acidophilus is found within our own bodies, and there is fascinating science being uncovered every day about how we rely it, and many other species of bacteria, for our health. There are more bacteria cells in our body than our own, and even our immune cells rely on signals from bacteria to activate.

The ideal temperature for lactobacillis is the same as a hole dug deep in the ground, or a cave. I like to think about my distant ancestors, in the cave, surrounded by their hunted and gathered provisions. Fermenting and evolving altogether.
