Controlled Rot
Fermentation, composting, two magical processes that I’m blessed to be engaging with on a daily basis.
As I was watering our bioreactors this evening I thought about how all this chicken manure and food scraps could be a heaping pile of rankness. Instead, we compile it a certain way that allow full aspiration, keep it hydrated, and it becomes life-giving compost.
Same thing with making sauerkraut, yogurt, kefir, pickles, kombucha, cheese, beer… With no intention, these would likely just become putrid milk or vegetables. But, with care and the right conditions, it preserved and more delicious and nutritious.
